It’s my boyfriends birthday tomorrow and I really wanted to make him a birthday cake but since we’ve cut down on sugar/chocolate/all things yummy, I was curious if I could make something delicious and guilt free.

I actually found this recipe while I was unsuccessfully scrolling through the Jamie Oliver website for the Spinach & Feta Pie and thought I’d give it a shot, and as usual tweeked it a bit. It’s super easy but you do need a food processor as most of the ingredients are chopped into a paste consistency.

Ingredients

Note:- a bread tin would be perfect for this mix – if using a bigger tin like in the pictures below, double the base ingredients.

Base Mix

  • 175g dates (stones cut out)
  • 50g dark chocolate
  • 50g cranberries
  • 75g cashews
  • 75g hazelnuts
  • 3 tablespoons golden syrup or honey

Fudge Mix

  • 50g dates (stones removed)
  • 40g cashews
  • 2 tablespoons chia seeds
  • 3 tablespoons cocoa powder
  • 2 tablespoons coconut oil
  • 3 tablespoons golden syrup or honey

Directions

1. Place the chia seeds in a bowl with 8 tablespoons of water, mix and set aside. This will give your top layer the fudge consistency.

2. Place all of the dry base mix ingredients into the food processor and blitz. Add the remaining base ingredients and blitz to a paste consistency. Place your base mix into a greaseproof lined tin as below. If using a similar sized tin – double the ingredient measurements as my bottom layer was pretty thin!

3. Add the dry fudge mix ingredients to the clean food processor and blitz. Add the remaining fudge mix ingredients and blitz until smooth. Place the smooth fudge mix over the base mix and refrigerate preferably overnight.

Easy peasy! I’m going attempt this again with more nut and dried fruit varieties – the base mix is also pretty yummy by itself for healthy nut bars!
